Pasta Broccolini Recipe aka “Noodles Up”

Hey Sparkle Chicks and Funky Junkers! Here is the recipe for that hilarious video Mike and I did last week making Pasta Broccolini aka “Noodles Up”! We sure did have some fun with that one and plenty of bloopers along the way, heat up, heat down and lots of characters entering and exiting the camera view! It’s rarely a dull moment here in the DiDomenico household and we were glad to share one of our favorite recipes with everyone! Browning the garlic…smells so good!

Ingredients:

  • 2 Rotisserie Chickens
  • White Wine/Chardonnay
  • Chicken Stock
  • Sun Dried Tomato Halves – 1, 3oz. bag
  • 2, 14oz. cans of Quartered Artichoke Hearts
  • 2, 3.5oz. jars of Capers
  • 1 lb. Penne Pasta
  • 5 oz. grated Parmesan/Romano cheese
  • 2 large heads of broccoli
  • 2 tbs. minced garlic

directions:

Start by placing a large pan on medium high heat and add some oil, we use avocado oil but olive oil is good too! Once that oil gets warm I add in two large tablespoons of minced garlic and get that nice and brown! After the garlic is browned I add in two large heads of broccoli that I cut up beforehand! Stir it all in together and then add in a mixture of white wine and chicken stock. Just enough that will fill the bottom of the pan and enough that it will steam your broccoli! Make sure to cover it and stir it every few minutes! At this time I get a large pot of water going to cook my penne pasta in!

When your broccoli is about half way done, it is time to add in your chicken! I use two rotisserie chickens that I have pulled all apart and I just dump it right into the broccoli mix. At this time I also add in a 3oz. bag of sun dried tomatoes that I have cut into thin strips! Stir it all together and put the lid back on, keep your heat on medium to medium high heat! Periodically I keep adding in more chicken stock and white wine! I don’t really measure how much I just keep adding!

Once the broccoli is tender, you can now add in your two cans of quartered artichoke hearts (drained) and 2 bottles of capers (drained). Continue to mix it all together, stirring periodically and also adding more chicken stock and white wine!

Once you have all your ingredients added, add in your 1 pound of penne pasta and get that going! When your pasta is done, drain the water and turn off the heat to the pan with all the mix in it! Get yourself a very large pasta bowl and dump your pasta into the bowl, add in your broccolini mix to the pasta and stir it all together! Once you have it all mixed up add in 5oz. of grated Parmesan or Romano cheese and stir it all together! Eat and enjoy!

Please let us know if you try this recipe and what you may have done differently! On a side note, I save some of the broccolini for myself and add it to some zucchini noodles for when I don’t feel like eating pasta! This recipe is also perfect for leftovers! Enjoy!
